Ingredients:


  • 12 fresh whole jalapeños

  • 8 oz cream cheese, softened

  • 1 cup shredded sharp cheddar cheese

  • 1 tsp garlic powder

  • 1/2 tsp smoked paprika

  • Salt to taste

  • 12 slices of thick-cut bacon

  • Toothpicks (soaked in water)

  • Mesquite wood chunks or chips for grilling


Instructions:


1. Prep the Jalapeños: Slice the tops off the jalapeños and core them using a pepper corer or knife. Remove all seeds if you prefer less heat.

2. Make the Filling: In a bowl, mix cream cheese, shredded cheddar, garlic powder, paprika, and a pinch of salt until well combined.

3. Stuff ‘Em Up: Use a small spoon or piping bag to fill each jalapeño with the cheese mixture.

4. Wrap It Up: Wrap each stuffed jalapeño with a slice of bacon and secure it with a soaked toothpick.

5. Fire It Up: Set up your grill with mesquite wood for that authentic smoky flavor. Grill the jalapeños over medium heat, turning occasionally, until the bacon is crisp and the peppers are tender—about 15–20 minutes.

6. Serve & Savor: Let cool for a few minutes, then serve with ranch or your favorite dipping sauce.

Just like a bubbling dish of green chile chicken enchiladas fresh out of the oven, the perfect home should wrap you in comfort and leave you feeling satisfied. Whether you’re hunting for a dream kitchen to bring bold recipes to life or a backyard built for Sunday get-togethers, West Texas living brings the spice, soul, and space to make every day feel like home.


Green Chile Chicken Enchiladas


Ingredients:


For the Enchiladas:


  • 2 cups cooked shredded chicken

  • 1 (10 oz) can cream of chicken soup

  • 1/2 cup sour cream

  • 1 (4 oz) can diced green chiles

  • 1/2 tsp cumin

  • 1/4 tsp garlic powder

  • Salt and pepper to taste

  • 2 cups shredded Monterey Jack or cheddar cheese

  • 8–10 corn tortillas

  • 1/4 cup chopped fresh cilantro (optional garnish)


For the Sauce:


  • 1 tbsp butter

  • 1 tbsp flour

  • 1/2 cup chicken broth

  • 1/2 cup milk

  • 1/2 cup sour cream

  • 1/2 cup diced green chiles


Instructions:


Prepare the Filling:


  1. In a large bowl, mix the shredded chicken with cream of chicken soup, sour cream, diced green chiles, cumin, garlic powder, salt, pepper, and 1 cup of shredded cheese.


Make the Sauce:


  1. In a saucepan, melt butter and whisk in flour until bubbly.

  2. Slowly add chicken broth and milk, whisking until thickened.

  3. Stir in sour cream and green chiles. Simmer for 2–3 minutes.


Assemble & Bake:


  1. Preheat oven to 350°F.

  2. Lightly heat tortillas in a skillet or microwave until pliable.

  3. Fill each tortilla with the chicken mixture, roll, and place seam-side down in a greased 9x13" baking dish.

  4. Pour green chile sauce over the enchiladas and top with remaining cheese.

  5. Bake uncovered for 25–30 minutes until bubbly and golden.

  6. Garnish with cilantro if desired, and serve hot.
