Ingredients:


  • 1 whole turkey (12-14 pounds)

  • 1/2 cup unsalted butter, melted

  • 1/4 cup olive oil

  • 1/4 cup kosher salt

  • 1/4 cup black pepper

  • 1/4 cup garlic powder

  • 1/4 cup onion powder

  • 1/4 cup paprika

  • 1/4 cup mesquite wood chips

  • 1/4 cup charcoal

Instructions:


  1. Light the charcoal in a chimney starter and let it burn until the coals are covered with white ash. Then, dump the coals onto one side of the grill to create an indirect heat zone.

  2. Soak the mesquite wood chips in water for at least 30 minutes before using them. This will help them produce smoke instead of catching fire.

  3. Once the coals are ready, add a handful of the soaked wood chips on top of the coals. This will create smoke that will flavor the turkey.

  4. Preheat your grill to 225°F.

  5. Rinse the turkey and pat it dry with paper towels.

  6. Mix together the melted butter, olive oil, salt, pepper, garlic powder, onion powder, and paprika in a small bowl.

  7. Rub the mixture all over the turkey, including under the skin and inside the cavity.

  8. Place the turkey on the grill.

  9. Smoke the turkey for 6-8 hours or until the internal temperature reaches 165°F.

  10. Add more soaked wood chips every hour or so to keep the smoke going. You can also add more charcoal as needed to maintain the heat.

  11. Remove the turkey from the grill and let it rest for 20-30 minutes before carving.
