Lainie's Key Lime Pie Recipe
Ingredients:
For the Graham Cracker Crust:
1 1/2 cups graham cracker crumbs
1/3 cup white sugar
6 tablespoons unsalted butter, melted.
For the Key Lime Filling:
4 egg yolks
14-ounce can of sweetened condensed milk
1/2 cup key lime juice
For the Whipped Topping:
1 cup heavy cream
2 tablespoons powdered sugar
Directions:
Preheat your oven to 375°F (190°C).
Mix graham cracker crumbs, sugar, and melted butter until combined, then press into a 9-inch pie plate. Bake the crust for 7 minutes, then let cool.
Lower the oven temperature to 350°F (175°C).
Beat egg yolks in a bowl until they lighten in color. Gradually add the condensed milk and continue to beat until thoroughly combined. Gradually add the lime juice while continuing to mix. Pour this mixture into the cooled crust.
Bake for 15 minutes, until set. Let cool, then refrigerate for at least 2 hours.
For the topping, whip the heavy cream and sugar until stiff peaks form. Spread or pipe over the pie, then refrigerate until ready to serve.
